Fermentation is one of the oldest cooking methods recorded.  It is a technique that has been perfected over hundreds of years.  In the past, fermentation was a way to preserve food (mostly produce) during times of famine.  But is that all it was for?  Today, we discuss what exactly fermentation, some of the chemistry behind the process, and the health benefits associated with it.  We also go over some frequently asked fermentation questions and biochemistry.
